The Best Ginger Molasses Cookie Recipe

 

Usually I prefer something salty, like chips and salsa. With that said, my favorite cookie EVER is the Ginger Molasses Cookie. Have you tried it? It’s seriously chewy and delicious! The first time I tried one was at Paradise Bakery. When we moved to Virginia, there was no Paradise Bakery to be found. Devastation!

Obviously I resorted to team Google for a replacement STAT! Which is when I happened upon the BEST recipe possible for Ginger Molasses Cookies. It literally takes like 15 minutes to make them, and they’re a huge hit. I’ve made them twice when my in-laws have been here for Thanksgiving or Christmas, and they hardly last a night between the four of us!

 

Here’s what you need:

  • ½ cup, plus ⅓ cup granulated sugar
  • 2¼ cups all-purpose flour
  • 1 tsp baking soda
  • 1½ tsp cinnamon
  • 1½ tsp ginger
  • 
1/2 tsp cloves
  • ¼ tsp allspice
  • ¼ tsp pepper
  • ¼ tsp salt
  • 1½ sticks unsalted butter, softened
  • ⅓ cup packed dark brown sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 
1/2 cup dark molasses
  • confectioners sugar

 

** Important note: the butter MUST BE Land O’ Lakes, and unsalted. If it’s not, the cookies won’t rise correctly. Trust me on that!

 

Here’s how you make them:

  • Preheat oven to 375° and get to baking!
  • Mix all of the dry ingredients together with the exception of confectioners sugar (sugar, flour, baking soda, cinnamon, ginger, cloves, allspice, pepper, salt, brown sugar together).
  • Melt the butter for a few seconds in the microwave.
  • Mix the butter, egg yolk, vanilla extract and molasses in with the dry ingredients.
  • Roll the dough into little balls, place them on the cookie sheet, and bake them for 10 minutes.
  • Once they’re done, sprinkle as much confectioners sugar as you want on top of them and enjoy!
